I go through phases with breakfast foods. For a while it was overnight oats, before that it was scrambled eggs. Lately I've been craving this homemade granola. It's pretty similar flavour-wise to my overnight oats recipe, but texturally completely different. Stored in an airtight container it lasts a decent amount of time, and it's the perfect accompaniment to fruit and yoghurt.
1 tablespoon peanut butter
1 1/2 tablespoon maple syrup
a pinch of cinnamon
a pinch of nutmeg
a pinch of ginger
1. Preheat oven to 180 degrees celsius.
2. Melt peanut butter in the microwave for 30 seconds.
3. Combine peanut butter with oats and spices and mix well.
4. Spread evenly on a lined baking tray and bake for approximately 10 minutes (keep an eye on it though so it doesn't burn).
